Switch the lanzaboote input from v1.0.0 to master. v1.0.0 still sets
boot.bootspec.enable, which nixpkgs 26.05 removed, so Secure Boot hosts fail to
evaluate; master no longer sets it. Recorded as ADR-0006.

Revisit when a tagged release is compatible again.

Proof: the T495s host evaluates with this change.
